Ice formation is crucial in many industrial and natural contexts, from plane icing to icicles for instance. Using the simple situation of a water drop impact on very cold substrate, I will discuss the different parameters and physical mechanisms that control the dynamics of ice formation. Finally, I will present more complex situation where the freezing structure is controlled by a surface flow.
