Most new materials are created by an empirical process of discovery rather than by design. This applies particularly to soft materials such as emulsions, liquid crystals and gels, which are generally metastable: their properties depend on process history, not just thermodynamics. I shall give examples of how theory and simulations can explore the formulation principles for such materials, with the long-term goal of designing new materials from scratch.
