Particles can be trapped at liquid interfaces. the fact that the particles protrude into a second phase changes the rules of the game by which colloidal interactions are tailored, and this will be discussed. Strategies to affect the rheology of the interfaces will be discussed as well how changing the surface rheological properties can be used to affect break-up and coalescence in emulsions.
