DESCRIPTION:Emulsions are mixtures of immiscible fluids\, and 
 as such are frequently encountered in everyday lif
 e and industrial applications. In this presentatio
 n\, I will first detail how\, based on observation
 s from industrial partners\, we have revisited our
  understanding of emulsion stability and developed
  emulsions without surfactants. I will then discus
 s how the physical chemistry of emulsions has cont
 ributed to the revolution in single-cell studies i
 n biology.
